Hello,
I have summarised what I found. Some of it seems to contradict Adam's list but that may be alternative names these places go under.
The big WM at Stornoway has several panels for the districts in the parish, so you can save time and petrol by going their first.
"Outer Hebrides
Visited in 1983/84 and again in 2005. Just one photo, you will need a magnifier. Again, no names, only recorded the numbers/places.
I have looked up the UKNI site and found no entries.
There are few parishes, one town, a few villages but mostly townships/districts. These I found; any missing, I didn’t find.
Stornoway WM is a big one, on a hill top accessed from a residential rd next to hospital on road to the south.
Also in the parish, I found WMs at Point, or the Eye Peninsular, on the main rd between two churches at Garrabost. Well maintained, money been spent here to good effect.
Likewise at Back, on B895 just north of the village shops and next to a church, and, at the end of the road, in North Tolsta.
Uig parish: two found, on Isle of Great Bernera in Breaclete village (19 + 8 ) and another in Tolstachaolis, between Breasclete and Carloway: 18 + 6, the WW2 names were all Royal Navy.
Lochs parish: one found at Kershada on Loch Erisort, 16 names WW1 only.
Harris: just one for the whole island at Tarbert, the ferry terminal. Can’t miss it. Includes Isle of Scalpay.
Isle of Bernaray: WM in village nest to Health Centre.
North Uist: at Clachan, on the Lochmaddy Rd, ¼ mile east of the road junction.
Benbecula: on the main rd grid ref 803 519 in middle of island, can’t miss it.
South Uist: at Mingaray by side of main rd near Flora MacDonalds house (brown tourist sign).
From the townships listed, the ones for Harris, North and South Uist will be the only ones.
Eriskay and Barra not found."

This is the Back District memorial in the next village up from where I was raised - erected only a few years ago. I remember the site as a quarry for roadfill.
I took a number of picture of it this summer and will append them.

You mention an Eriskay War Memorial which has not been found. I have not heard of one before. Is there any evidence that such an edifice exists?
The dead of both wars from Eriskay are commemorated on the South Uist War Memorial at Bornish, so mention of another memorial with no location is puzzling to say the least.

I suspect it is the way you have read the first post. John's intention may have been to say he found no memorial when he visited the island rather than say there was one which he couldn't find.
With Eriskay men being commemorated on South Uist it would explain why he couldn't find one.
